Renewed business opportunities from underutilized lake fish (VAJAKALA)

The purpose of the project is to expand the use of lake fish by raising the need to make exploited lake fish part of a profitable commercial fishery by finding ways to economically sustainable utilization of the by-catch obtained alongside the actual target species.

The project focuses on structured value-added products and opens up new innovation paths for catch species that are somewhat less known in Finland in terms of food use, but have potential. The project focuses in particular on promoting the utilization of tench (Tinca tinca), ruffe (Gymnocephalus cernuus) and bream (Abramis brama). The project also investigates the biological and environmental starting points of selected fish species in terms of product introduction. Suitable manufacturing and processing methods are mapped and qualitative challenges and the possibilities of these solutions are comprehensively investigated. The project implements pilot operation together with industry players.
